The Greek eat more vegetables than all other Europeans. The Greek orthodox faith demands of its followers to fast for about 1/3 of each year. During the days of fasting not only is the consumption of meat prohibited, but also that of fish and of animal products such as milk, cheese and eggs. And even those people who are not strong believers are very fond of eating plenty cooked vegetables. That is the reason why vegetables dishes in restaurants in menus are listed not as side dishes but always as meal on their own right.

ingredients
- 2 large tomatoes ( cherry tomatoes ere good also)
- 1 cucumber
- 1 green pepper
- 1 onion
- 150 g Feta cut into cubes
- 1/2 teaspoon dried oregano
- 1 teaspoon fresh thyme, chopped
- 6 tablespoons olive oil
- 2 tablespoons red wine vinegar
- salt and freshly ground black pepper
- black olives
Wash and dry the vegetables. Cut the tomatoes into eighth’s (cherry tomatoes into quarters). Chop the unpeeled cucumber into cubes. De seed the pepper and cut into narrow strips. Remove bones from big black Greece olives and cut them. Cut the onion to rings. Put the vegetables and the Feta cheese into a salad bowl and add herbs. Mix oil, vinegar, salt and pepper and pour over the salad. Decorate with olives and salad leaves.

Very Greek recipe! I was in Greek some days ago and very inspired from their culinary.
